I’ve been playing around with protein powder in cooking some more; this is a first try at pancakes with that.
Ingredients
- ½cup almond flour
- ¼cup Vega clean protein
- 1tsp baking powder
- 1tsp cinnamon
- 2 eggs
- 1 cup unsweatened soya milk – I used Alpro’s Organic Soya Plain Drink which is pretty much just soya beans & water
- 1tbsp peanut butter

Method
Put all the ingredients into a blend; blend very well.
Coat a frying pan in oil / Fry Light and heat up.
Pour some of the mixture out; flip once a good number of bubbles form on the top side.

End result

The end result was quite tasty, although they did suffer a little bit from the same issue as the first batch of waffles I made – they didn’t feel that substantial.
Maybe adding sweet potato to the mix would also work for these?
